DAY 4: Brown Bagging Never Tasted So Good

Rolling into Day Four of the Brown Bag Challenge and I am feeling pretty good. Today's lunch is in honor of Fall. I am now craving my own cooking so I decided to make Turkey Meatballs with a Lemon Yogurt Dipping Sauce. Let me tell you it is YUMMY.


Always add a little garnish just liven up the plate and to get your palette excited about eating.


Remember that variety is the spice of life. Find a recipe that you like and make it your own. Adding new twists to old dishes will keep you away from the "habit" of eating out or mindless eating. Don't get me wrong, I enjoy a great dining experience, but nothing can ever compare to the meals that you make yourself. I have included my recipes for you to try.


SPICY TURKEY MEATBALLS

1lb Ground turkey
1 Jalapeno, seeded, ribs removed and diced fine
2tbs Red onion, diced fine
1 t fresh garlic, minced
1 tbs Fresh cilantro, chopped fine
1 dash Salt
1 dash black pepper
1 Whole egg
1 cup Plain breadcrumbs
1-2 tbs Olive oil or neutral oil

1. Mix diced and chopped ingredients into the ground turkey.
2. Season with salt and pepper
3. Add egg and bread crumbs and mix well but do not overly mix.
4. Heat oil (if using olive oil be careful because it has a low smoking point and
will burn quickly).
5. Shape 2 tablespoonfuls of meat mixture in your hands into balls.
6. Place in hot oil and cook turning until even and well-browned.
7. Drain on paper towels and cover to keep warm.


LEMON YOGURT DIPPING SAUCE

1 cup Plain Greek yogurt
1 t Fresh garlic, minced
1 t Fresh Cilantro, chopped fine
3 tbs Fresh squeezed lemon juice (I used 3/4 of lemon)
1 dash Salt
1 dash Ground white pepper

Mix all ingredients together and refrigerate until chilled.

Enjoy!
