DAY 2: Lunch On-The-Go

What do you do when the schedule is tight and it's so much easier to just roll into the local fast-food "restaurant" and grab a burger and fries? Here are my 5 rules to a quick lunch:

1. Fruits and vegetables are great on the go!- Some require no prep, just peel and enjoy. Instead of the relying on that candy bar to get you through the day, rely on nature's candy to give you the healthy boost of energy needed throughout the day.

2. Leftovers make a great lunch the next day: While you're cleaning up the dinner dishes why not pack a hearty lunch from the awesome dinner casserole. Quick, easy, and sure to taste even better the next day.

3. Keep it simple: Try throwing some spinach leaves a cucumber and nuts together and tossing it in a raspberry viniagrette...quick and very delicious.

4. Make time on the weekends to prepare lunch for the week ahead- This requires shopping ahead, but will save you a lot of time and eliminates the temptation of eating out.

5. Don't be afraid to try something new. It's fun to take your favorite meal and create a lunch time twist. Meatloaf minis or Curry Chicken Salad with Pecans and Cranberries will take the monotony out of the meal time break.

Lunch today is super quick: Shaved deli turkey with Salad Savoy and Tomato, fresh grape medley. Today I omitted the chips as a gesture of good will. Happy Friday!
